Tubby’s Avo Toast

Serves 1-2


1-2 slices of your favourite bread 

(we suggest fresh out-the-oven Ciabatta)

Salted butter

Half a ripe avocado 

Tubby’s Olive oil

1-2 large eggs 

Tubby’s Moroccan spice 

Salt and pepper to taste

Tubby’s Fire Dance Chilli Paste for an extra optional kick! 

Juice of half a fresh lemon


  • Slice your avocado lengthways into slivers
  • Squeeze fresh lemon juice over the avocado slivers and set aside (lemon keeps avocado from going brown)
  • Next slice your bread and toast to your preference  
  • Heat the olive oil over a medium high heat and fry your eggs just the way you like them 
  • Take out your toast and add your butter and optional chilli paste
  • Lay your avocado slivers gently over the toast
  • Top with the egg and add salt and pepper to taste 
  • Sprinkle a little Tubby’s Moroccan spice over top and enjoy!

Serving Suggestions:

  • Cream cheese smeared over the bread instead of butter can add a perfect base for the chilli paste by slightly neutralising the fiery flavour  for those who need the heat turned down
  • Replace the egg with slivers of smoked trout or salmon for a whole new depth of flavour with a few optional caper berries
